Dan's response to the WA Post article is very well written, but raises more questions. Founding Farmers appears to be abiding to some principles of, and capitalizing on, facets of the green movement. Both stories (Post and FF) imply that ALL restaurants may benefit by announcing where things come from (no matter where, because transparency may unfortunately sell as much as actual green-ness) and adding to their mission statement that they are trying their best to be sustainable. As for where any of these establishments actually fall on the scale, that's up to the consumer to figure out for themselves through at least as much research as Dan does for FF.

We now need two things, as responsible foodies: 1) a restaurant with the guts to avoid compromise and make no excuses (everything seasonal, organic, local, socially and environmentally responsible to the extent possible at increased cost and chefs with enough talent and guts to change with the seasons) -- I dare you, whoever is out there listening... do it and I'll pay triple for the meal if i can actually trust you; and 2) an un-biased, scaled ranking for restaurants that make any of these claims -- I imagine FF would fall in the middle of said responsibility scale... as they seek their chosen level of compromise or "balance."

Hello Erez;

Thank you so much for your support, and for affirming that what we've been striving for is important. We want everyone to know that we truly are dedicated to maintaining our mission and to upholding our quality standards at every turn, and we want nothing more than to serve great food and mitigate our impact on the environment and the earth while doing so.

We appreciate and understand that sustainable agriculture and concerns of where our food comes from are very important issues and that there's a lot of false information out there. We'll keep doing whatever we can to help educate and share important information - like the farms and purveyors that supply our restaurant - on our menus and on our web site.

Thank you, and we hope to see you soon!

I was happy to see this article published. Over the summer, when my family decided to dine at Founding Farmers, I tried to get information from the restaurant staff ahead of time about the sources for their food. I was met with a very vague non-response ("we sometimes source from..."). It's fine to realize the financial realities of using sustainable agriculture, but your mission statement should reflect as such.

Your comments both in the article and here on the blog demonstrate levels of dedication and transparency that all green businesses should strive for.

Keep up the good work on this difficult task.
